A Demonstration of the Fat-Binding Process. The in vivo studies (living-subjects studies) of Chitosan have corroborated what occurs in vitro (in a jar or test tube), what you see here closely parallels the fat-binding function of Chitosan in the bodies digestive tract. (All ingredients used in this demonstration are perfectly harmless.)
Step 1: a simple jar of water is used to represent the fluids of the digestive tract.
Step 2: 1 dropper of the fat is added to the water, stimulating the bodies gastric fluids. The fats acid has been dyed with a fat-soluble color agent. This helps us see fat acid, a normally transparent fat, throughout the demonstration.
Step 3: The fatty substance found in egg yolk is added to the jar to act as an emulsifier. (An emulsifier is an agent that disbursed is one substance evenly throughout another substance which it normally would not mix, the classic examples being oil and water. We are all familiar with the use of eggs in the salad dressing to keep oil from separating. The egg acts as an emulsifier).
