Chitosan is an absolutely unique product in how it works. It's effective because it prevents fat from being absorbed by the body. The basic concept behind Chitosan is this: if you can tie dietary fat to fiber, it will pass through the body rather than being absorbed.
Over the years, research has been devoted to a variety of resins, gums, and fibers that passing league prevents fat absorption. Unlike those substances, Chitosan actively absorbs (attracts or attached to) anywhere from 3 to 12 grams of fat to the fiber. Of course, variables exist from one person to the next.
Absorption depends on when the Chitosan is taken, how well it mixes with the food, and how much that a meal contains. Another important factor is a presence of Vitamin C, which appears to increase Chitosan's capacity as a fat-binder.
